Until now, I had never had an enchilada. I didn't really even know what an enchilada was. When we eat Mexican, I tend to stick to tacos or fajitas, because it's what I know, and I can be comfortable with what's in it. Glad sent me the ingredients and recipe for Mom Made Chicken Enchiladas. It looked interesting, so I figured I'd give it a try.
With Glad FreezerWare containers, you can cook meals in advance, then freeze, and pull it right from the freezer to the microwave. So I figured if I didn't like it, I'd freeze it and hubby could eat it later.
But, I liked it!
We had some leftover, but it never made it to the freezer because hubby ate it for lunch.
What I liked bast about this recipe is the idea to keep it simple by using a store bought rotisserie chicken.

I left out the onion, and added extra cheese. Oh, and I guess I overstuffed my tortillas because they kept cracking, and I didn't need all 12.
I topped it with sour cream, and it was so good! We will definitely be eating this again.
